Anthocyanins cause the dark purple colour in blackcurrants. Anthocyanins are water soluble plant pigments that protect plants against strong UV light by absorbing certain wavelengths and preventing cell DNA damage. Anthocyanins also bind free radicals which develop with plant stress.
